Easy Santa Cake Mix Cookies (Print version)

Soft cake mix cookies packed with chocolate chips, red and green candies, and a tender vanilla crumb.

# Ingredients:

For the cookie dough

01 - 1 box (15.25 oz / 432 g) white or vanilla cake mix
02 - 2 tablespoons (16 g) all-purpose flour
03 - 2 large eggs
04 - 1/2 cup (120 ml) neutral oil, such as vegetable or canola oil
05 - 1 teaspoon vanilla extract

For the mix-ins

06 - 3/4 cup (128 g) red and green candy-coated chocolate pieces, divided
07 - 1/2 cup (85 g) semi-sweet chocolate chips, divided
08 - 2 tablespoons holiday sprinkles

# Instructions:

01 - Preheat the oven to 350°F. Line two baking sheets with parchment paper.
02 - In a large bowl, stir together the cake mix and flour. Add the eggs, oil, and vanilla, then mix until a thick, sticky dough forms.
03 - Fold in 1/2 cup of the candies, 1/3 cup of the chocolate chips, and the sprinkles. Reserve the rest for topping the cookies.
04 - Scoop 1 1/2 tablespoon portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. Press reserved candies and chocolate chips onto the tops.
05 - Bake for 8-10 minutes, until the edges are set and the tops look matte but still pale. Do not overbake.
06 - Let the cookies rest on the baking sheet for 2 minutes, then move them to a wire rack to cool completely.

# Good to know:

01 - Chill the dough for 15 minutes if it feels too sticky to scoop neatly.
02 - For thicker cookies, do not flatten the dough balls before baking.
03 - Store airtight at room temperature for up to 3 days or freeze for up to 2 months.
