Cheesy sausage balls with Rotel and cream cheese, spicy and perfect for gatherings or snacks.

# Ingredients:

→ Main Components

01 - 450 g uncooked breakfast sausage, mild or hot
02 - 225 g cream cheese, softened
03 - 285 g canned diced tomatoes with green chilies (Rotel), very well drained
04 - 170 g shredded cheddar cheese
05 - 180 g baking mix (such as Bisquick)

→ Seasonings

06 - 0.5 tsp garlic powder, optional
07 - 0.5 tsp onion powder, optional
08 - Freshly ground black pepper, to taste

# Instructions:

01 - Preheat oven to 190°C. Line a baking sheet with parchment paper or grease it lightly.
02 - Using a strainer and paper towels, thoroughly drain the diced tomatoes with green chilies to eliminate excess moisture.
03 - In a large bowl, combine the sausage, softened cream cheese, drained Rotel, cheddar cheese, baking mix, and seasonings. Mix until evenly incorporated.
04 - Scoop out the mixture and shape into balls, approximately 3 cm in diameter. Arrange evenly on the prepared baking sheet.
05 - Place the baking sheet in the oven and bake for 20–25 minutes, or until the sausage balls are golden brown and cooked through.
06 - Allow to cool slightly before serving. Enjoy warm for best flavor and texture.

# Notes:

01 - For best results, ensure the Rotel is fully drained to prevent excess moisture in the mixture.
02 - Use gloves when mixing by hand to minimize mess and ensure even distribution of ingredients.
