Preheat oven to 190°C. Line a baking sheet with parchment paper or grease it lightly.

Using a strainer and paper towels, thoroughly drain the diced tomatoes with green chilies to eliminate excess moisture.

In a large bowl, combine the sausage, softened cream cheese, drained Rotel, cheddar cheese, baking mix, and seasonings. Mix until evenly incorporated.

Scoop out the mixture and shape into balls, approximately 3 cm in diameter. Arrange evenly on the prepared baking sheet.

Place the baking sheet in the oven and bake for 20–25 minutes, or until the sausage balls are golden brown and cooked through.
