Refreshing Cucumber Lemonade (Print version)

Fresh cucumber, lemon juice, honey, and mint make a crisp homemade lemonade that tastes clean, bright, and cooling.

# Ingredients:

For the lemonade

01 - 2 English cucumbers, about 1 1/2 lb (680 g), chopped
02 - 1 cup (240 ml) fresh lemon juice, from about 5-6 lemons
03 - 1/2 cup (170 g) honey
04 - 6 cups (1.4 L) water, divided
05 - 1/8 teaspoon fine salt
06 - 1/4 cup fresh mint leaves, plus more for serving

For serving

07 - Ice cubes
08 - Thin cucumber slices
09 - Lemon slices

# Instructions:

01 - Stir the honey with 1 cup hot water until fully dissolved. Let it cool for a few minutes while you prepare the cucumber.
02 - Add the chopped cucumbers and 1 cup cold water to a blender. Blend on high for 30-45 seconds, until the cucumber is completely broken down.
03 - Set a fine-mesh sieve over a bowl or pitcher. Pour in the blended cucumber and press gently with a spoon to extract the juice without forcing too much pulp through.
04 - In a large pitcher, stir together the cucumber juice, lemon juice, honey water, remaining 4 cups cold water, salt, and mint leaves.
05 - Refrigerate for at least 15 minutes if time allows. Serve over ice with cucumber slices, lemon slices, and extra mint.

# Good to know:

01 - Best served very cold on the day it is made.
02 - For a vegan version, replace honey with agave syrup or simple syrup.
03 - For sparkling cucumber lemonade, replace 2 cups of the cold water with sparkling water just before serving.
