Ramen Noodle Tacos (Print version)

Saucy ramen noodles and taco-seasoned beef tucked into warm tortillas with crisp cabbage, cheese, and lime crema.

# Ingredients:

For the ramen beef

01 - 2 packets instant ramen noodles, seasoning packets discarded or saved for another use
02 - 1 tablespoon neutral oil
03 - 1 lb (450 g) ground beef
04 - 2 tablespoons taco seasoning
05 - 1/3 cup (80 ml) water
06 - 1 tablespoon soy sauce
07 - 1 tablespoon fresh lime juice
08 - 1/2 teaspoon garlic powder
09 - 1/4 teaspoon black pepper

For serving

10 - 8 small flour tortillas
11 - 1 cup (70 g) shredded green cabbage
12 - 1 cup (115 g) shredded cheddar or Monterey Jack cheese
13 - 2 scallions, thinly sliced
14 - 1/3 cup (80 g) sour cream or crema
15 - 1 tablespoon fresh lime juice, for the crema
16 - Hot sauce, to taste
17 - Lime wedges, for serving

# Instructions:

01 - Bring a pot of water to a boil. Add the ramen noodles and cook about 1 minute less than the package directions. Drain well and set aside.
02 - Heat the oil in a large skillet over medium-high heat. Add the ground beef and cook for 6-8 minutes, breaking it up, until browned and cooked through.
03 - Drain excess fat if needed. Stir in taco seasoning, water, soy sauce, lime juice, garlic powder, and black pepper. Simmer for 2-3 minutes until glossy.
04 - Add the drained ramen to the skillet. Toss with tongs for 1-2 minutes until the noodles are coated and the sauce clings to them.
05 - Heat the tortillas in a dry skillet for 20-30 seconds per side until soft and lightly browned. Keep them wrapped in a clean towel.
06 - Stir the sour cream or crema with 1 tablespoon lime juice. Add a small pinch of salt if needed.
07 - Fill each warm tortilla with ramen beef, cabbage, cheese, scallions, lime crema, and hot sauce. Serve right away with lime wedges.

01 - Cook the ramen slightly under package directions so it stays chewy in the taco filling.
02 - Best eaten right after assembly while the tortillas are warm.
