Cheesy Beef Soup (Print Version)

# Ingredients:

01 - 1.5 pounds ground beef or sausage.
02 - 1 cup onion, chopped.
03 - 1 green bell pepper, chopped.
04 - 1 tablespoon minced garlic.
05 - 1 teaspoon onion powder.
06 - 1 teaspoon garlic powder.
07 - 1 teaspoon cumin.
08 - 32 ounces beef or vegetable broth.
09 - 8 ounces cream cheese, softened.
10 - 3 (4 ounce) cans mild green chiles.
11 - 2 cups shredded cheddar cheese.
12 - 1 tablespoon cornstarch (optional).
13 - 1 tablespoon cold water (optional).

# Instructions:

01 - Brown ground beef or sausage in Dutch oven over medium heat. Drain grease.
02 - Add onion, bell pepper, and garlic. Saute 5-6 minutes until onion softens.
03 - Stir in spices and broth. Bring to simmer, cover, reduce heat to low and cook 10 minutes.
04 - Add cream cheese, green chiles, and cheddar. Whisk until cheeses are completely melted.
05 - If desired, stir in cornstarch mixed with cold water until thickened.
06 - Top with additional cheese, tomatoes, green onions or avocado.
