Pumpkin Spice Snack Mix with Fall Flavors (Print version)

A sweet and salty pumpkin spice snack mix with cereal, pretzels, nuts, maple glaze, cranberries, and fall candy.

# Ingredients:

For the snack mix

01 - 5 cups (150 g) rice or corn square cereal
02 - 2 cups (100 g) mini pretzels
03 - 1 cup (110 g) pecan halves
04 - 1/2 cup (65 g) pepitas

For the pumpkin spice glaze

05 - 6 tablespoons (85 g) unsalted butter
06 - 1/3 cup (70 g) packed light brown sugar
07 - 3 tablespoons maple syrup
08 - 2 teaspoons pumpkin pie spice
09 - 1 teaspoon vanilla extract
10 - 3/4 teaspoon fine salt

For finishing

11 - 3/4 cup (90 g) dried cranberries
12 - 1 cup (160 g) fall candy, such as candy corn or candy-coated chocolate

# Instructions:

01 - Preheat the oven to 250°F. Line two rimmed baking sheets with parchment paper.
02 - Add the cereal, pretzels, pecans, and pepitas to a very large bowl. Toss gently so the pieces are evenly mixed.
03 - Melt the butter in a small saucepan over medium-low heat. Stir in the brown sugar, maple syrup, pumpkin pie spice, vanilla, and salt until smooth, about 2 minutes.
04 - Pour the warm glaze over the cereal mixture. Fold with a wide spatula until the pieces are evenly coated and lightly glossy.
05 - Divide the mix between the prepared baking sheets. Bake for 40-45 minutes, stirring every 15 minutes, until fragrant and mostly dry to the touch.
06 - Let the snack mix cool completely on the pans. Break up any large clusters, then toss with dried cranberries and fall candy.

# Good to know:

01 - Cool completely before storing so the cereal stays crisp.
02 - Makes about 12 cups, depending on cereal and pretzel size.
03 - Store airtight at room temperature for up to 1 week.
