# Ingredients:

01 - Salted butter (4 tablespoons).
02 - Olive oil (2 tablespoons).
03 - Sweet onions, diced (2 medium).
04 - Kosher salt (1/4 teaspoon plus more for water).
05 - Red pepper flakes (1/4 teaspoon).
06 - Water (1/4 cup).
07 - Fresh thyme leaves (1/2 teaspoon).
08 - Heavy cream (1 cup).
09 - Parmesan cheese, grated (1/2 cup).
10 - Trader Joe's Pumpkin Gnocchi (2 boxes).

# Instructions:

01 - Heat butter and oil in skillet over medium heat.
02 - Cook onions with salt and pepper flakes 30-40 minutes until golden, adding water if needed.
03 - Stir in thyme and cook 2 more minutes.
04 - Boil gnocchi in salted water 2-3 minutes until floating.
05 - Add gnocchi to onions with butter, then stir in cream and cheese.

01 - Don't rush caramelizing onions.
02 - Can make onions ahead.
03 - Add pasta water if sauce is too thick.
