Creamy Protein Pudding with Simple Ingredients (Print version)

A thick, creamy protein pudding made with cottage cheese, Greek yogurt, cocoa, and protein powder in about 10 minutes.

# Ingredients:

For the pudding

01 - 1 cup (225 g) low-fat cottage cheese
02 - 1 cup (240 g) plain Greek yogurt
03 - 1/3 cup (80 ml) milk, plus more as needed
04 - 1/4 cup (30 g) gluten-free chocolate protein powder
05 - 3 tablespoons unsweetened cocoa powder
06 - 1 tablespoon creamy peanut butter
07 - 1-2 tablespoons maple syrup, to taste
08 - 1 teaspoon vanilla extract
09 - 1 pinch fine sea salt

For serving

10 - 1/2 cup fresh raspberries or strawberries
11 - 1 tablespoon shaved dark chocolate, optional

# Instructions:

01 - Add cottage cheese, Greek yogurt, milk, protein powder, cocoa powder, peanut butter, maple syrup, vanilla, and salt to a high-speed blender.
02 - Blend for 45-60 seconds. Scrape down the sides, then blend again until the pudding looks glossy and no curds remain.
03 - If the blender struggles, add milk 1 tablespoon at a time. Keep the mixture thick enough to spoon, not thin enough to drink.
04 - Divide the pudding into 4 small bowls or jars. Cover and refrigerate for at least 30 minutes, or up to 4 days.
05 - Stir each portion before serving. Top with berries and shaved dark chocolate if using.
