Potato Cheese Sticks Recipe (Print version)

Crispy potato cheese sticks made with mashed potatoes, melty mozzarella, and a crunchy panko coating.

# Ingredients:

For the potato sticks

01 - 1 1/2 lb (680 g) russet potatoes, peeled and cut into chunks
02 - 1/2 cup (55 g) shredded cheddar cheese
03 - 3 tablespoons cornstarch
04 - 1 teaspoon garlic powder
05 - 1/2 teaspoon smoked paprika
06 - 3/4 teaspoon fine salt, plus more for finishing
07 - 1/4 teaspoon black pepper
08 - 2 tablespoons chopped parsley or chives
09 - 6 low-moisture mozzarella string cheese sticks, halved crosswise

For breading and frying

10 - 1/2 cup (65 g) all-purpose flour
11 - 2 large eggs, beaten
12 - 1 1/2 cups (90 g) panko breadcrumbs
13 - 4 cups (950 ml) neutral oil, for frying
14 - Marinara, ranch, or spicy ketchup, for serving

# Instructions:

01 - Place the potatoes in a pot of salted water. Boil until fork-tender, 12-15 minutes. Drain well, return to the hot pot, and let them steam dry for 2 minutes.
02 - Mash the potatoes until smooth. Mix in cheddar, cornstarch, garlic powder, smoked paprika, salt, pepper, and parsley until the mixture is thick and moldable.
03 - Scoop about 3 tablespoons potato mixture into your palm and flatten it. Place one mozzarella half in the center, seal the potato around it, and roll into a stick. Repeat to make 12 sticks.
04 - Set the shaped sticks on a parchment-lined tray. Chill for 20-30 minutes, or until firm enough to handle without bending.
05 - Place flour, beaten eggs, and panko in three shallow dishes. Coat each stick in flour, dip in egg, then press into panko until fully covered.
06 - Heat oil in a deep skillet or Dutch oven to 350°F. Fry 3-4 sticks at a time for 2-3 minutes, turning gently, until crisp and golden. Drain and season lightly with salt.
07 - Let the sticks rest for 1 minute, then serve warm with marinara, ranch, or spicy ketchup while the cheese is melted.

# Good to know:
