Poor Man’s Husband Casserole (Print Version)

Layers of beef, cheese, and noodles create a comforting, budget-friendly meal the whole family will love.

# Ingredients:

01 - 450 grams ground beef
02 - 1 small onion, diced
03 - 1 teaspoon garlic powder
04 - Salt, to taste
05 - Black pepper, to taste
06 - 230 grams canned tomato sauce
07 - 240 grams cottage cheese or ricotta cheese
08 - 120 grams sour cream
09 - 200 grams cooked egg noodles
10 - 100 grams shredded cheddar cheese

11 - Chopped fresh parsley
12 - Chopped green onions

# Instructions:

01 - Preheat the oven to 175°C.
02 - In a large skillet over medium heat, sauté ground beef with diced onion until the beef is browned and the onion is soft. Drain off excess fat.
03 - Sprinkle garlic powder, salt, and pepper over the beef. Stir in tomato sauce and simmer for 5 minutes.
04 - In a mixing bowl, combine cottage cheese and sour cream, mixing until smooth.
05 - Spread half of the cooked egg noodles in the bottom of a baking dish (20x20 cm). Evenly distribute the cheese mixture over the noodles, then top with half of the beef mixture. Repeat layers with remaining noodles and beef, smoothing each layer.
06 - Sprinkle shredded cheddar cheese evenly over the top layer.
07 - Bake uncovered for 20 to 25 minutes, or until the casserole is bubbling and the cheese is golden brown.
08 - Let the casserole rest for 5 minutes before slicing. Garnish with chopped parsley or green onions if desired.

# Notes:

01 - Slightly undercook noodles to prevent over-softening during baking.
02 - Assemble ahead and refrigerate to bake just before serving.
03 - Extensions such as frozen peas or spinach add nutrition and colour.
04 - Substitute ground turkey or plant-based mince for beef if desired.
