Poblano Gouda Mac and Cheese (Print Version)

# Ingredients:

01 - 4 cups small pasta.
02 - 4 poblano peppers.
03 - 6 tablespoons unsalted butter.
04 - 1/4 cup all-purpose flour.
05 - 2 1/4 cups heavy cream.
06 - 2 teaspoons mustard powder.
07 - 1/4 cup mascarpone cheese.
08 - 1/3 cup smoked gouda cheese.
09 - 1/3 cup aged white cheddar cheese.
10 - 1/3 cup sharp cheddar cheese.
11 - 1 teaspoon Cajun seasoning.
12 - 1/2 teaspoon each: cayenne, smoked paprika, black pepper.
13 - 1/2 teaspoon kosher salt.
14 - 1/4 cup panko breadcrumbs.

# Instructions:

01 - Broil poblano strips skin-side up until blackened. Cool in bag and peel.
02 - Cook pasta in salted water for 75% of package time.
03 - Make blonde roux with butter and flour until nutty.
04 - Gradually whisk in cream and mustard powder until thickened.
05 - Stir in all cheeses until melted and smooth.
06 - Add seasonings and chopped poblanos.
07 - Mix in pasta, transfer to baking dish, top with breadcrumbs.
08 - Bake at 350°F for 15-20 minutes, then broil breadcrumbs.

# Notes:

01 - Can use fresh pasta without pre-cooking.
02 - Don't overbake to prevent separation.
03 - Let rest 5 minutes before serving.
