Pizza Grilled Cheese Sandwiches (Print version)

Gooey mozzarella, pepperoni, and tangy marinara packed inside golden buttered bread. Ready in under 20 minutes and every bit as satisfying as a pizza slice.

# Ingredients:

For the sandwiches

01 - 8 slices thick-cut bread (sourdough or Italian, about 3/4 inch thick)
02 - 4 tablespoons (60 g) unsalted butter, softened
03 - 4 tablespoons (60 ml) marinara or pizza sauce
04 - 8 oz (225 g) low-moisture mozzarella, freshly shredded
05 - 3 oz (85 g) pepperoni slices (about 24 slices)
06 - 1/2 teaspoon Italian seasoning
07 - 1/4 teaspoon garlic powder
08 - Pinch of salt and black pepper

Optional add-ons

09 - 2 tablespoons grated parmesan, for finishing
10 - Red pepper flakes, to taste
11 - Fresh basil leaves, to finish

# Instructions:

01 - Combine softened butter with garlic powder, Italian seasoning, and a pinch of salt in a small bowl. Spread the mixture evenly on one side of each bread slice.
02 - Spread about one tablespoon of marinara on the unbuttered side of four bread slices. Add a generous layer of shredded mozzarella, then lay 5 to 6 pepperoni slices on top. Press the remaining slices firmly on top, buttered side facing out.
03 - Set a large skillet or griddle over medium-low heat. Add the sandwiches and press gently with a spatula. Cook for 3 to 4 minutes until the bottom is deep golden brown and the cheese begins to melt at the edges.
04 - Flip each sandwich carefully with a wide spatula and press gently again. Cook for another 3 to 4 minutes until the second side is evenly golden and the cheese is fully melted through.
05 - Transfer to a cutting board and rest for one minute before slicing diagonally. Serve immediately with extra marinara on the side for dipping.

01 - Best eaten immediately while the crust is crispy and the cheese is fully melted.
02 - Use freshly shredded mozzarella from a block for the smoothest, stringiest melt.
