Bold Burgers with Pepperoni and Mozzarella (Print version)

# Ingredients:

For the burgers

01 - 1 1/2 lb (680 g) 80/20 ground beef
02 - 1 teaspoon kosher salt
03 - 1/2 teaspoon black pepper
04 - 1 teaspoon Italian seasoning
05 - 1/2 teaspoon garlic powder
06 - 1 tablespoon olive oil, if needed for the pan

For topping and serving

07 - 4 brioche or potato hamburger buns
08 - 2 tablespoons unsalted butter, softened
09 - 3/4 cup (180 ml) thick pizza sauce, warmed
10 - 1 1/2 cups (170 g) shredded low-moisture mozzarella
11 - 24 thin pepperoni slices, about 3 oz (85 g)
12 - 1/4 cup (25 g) grated parmesan cheese
13 - 2 tablespoons chopped fresh basil

# Instructions:

01 - Divide the beef into 4 loose portions and shape into patties slightly wider than the buns. Season both sides with salt, pepper, Italian seasoning, and garlic powder.
02 - Heat a large skillet over medium heat. Spread butter on the cut sides of the buns and toast for 2-3 minutes until golden. Transfer to plates.
03 - Increase the heat to medium-high. Add olive oil only if the skillet looks dry. Cook the patties for 4-5 minutes on the first side, then flip and cook until browned and the centers reach 160°F.
04 - Move the patties to one side if there is room, or transfer briefly to a plate. Add the pepperoni to the skillet and cook for 45-60 seconds per side until the edges curl.
05 - Spoon warm pizza sauce over each patty. Add mozzarella, then the crisp pepperoni. Cover the skillet for 45-60 seconds until the cheese melts.
06 - Place each cheesy patty on a toasted bun. Sprinkle with parmesan and basil, add the top buns, and serve hot.
