Mix Rice Chex cereal and chopped pistachios in a large bowl. In a separate plastic or silicone bag, combine powdered sugar and pistachio pudding powder.

Melt butter in a saucepan over medium-low heat. Add white chocolate chips and stir until melted and smooth.

Pour melted chocolate mixture over cereal and pistachios, gently stirring to coat evenly.

Let mixture cool slightly. Working in two batches, shake cereal in bag with sugar mixture until evenly coated.

Spread coated mixture on a baking sheet to cool and harden before serving.
