Pink Grapefruit Dessert Bars (Print Version)

# Ingredients:

→ Crust

01 - ½ cup butter, at room temperature
02 - ½ cup sugar
03 - 1 cup all purpose flour
04 - ⅛ teaspoon salt

→ Grapefruit Filling

05 - 2 large eggs
06 - ¾ cup sugar
07 - 3 tablespoons all-purpose flour
08 - 1 grapefruit, zested and juiced (need ¼ cup juice)
09 - Powdered sugar for dusting

# Instructions:

01 - Heat oven to 350°F. Create parchment paper sling in 8x8 inch pan using two overlapping pieces.
02 - Beat butter and sugar until light and fluffy, about 3 minutes. Mix in flour and salt. Press evenly into pan.
03 - Bake until lightly browned, 15-18 minutes. Remove and set aside.
04 - Whisk eggs and sugar for 1 minute until slightly thick. Add flour, grapefruit juice and zest. Pour over warm crust.
05 - Bake until lightly browned and set, 18-20 minutes. Cool completely, then cut into 16 squares.

# Notes:

01 - Store in airtight container with parchment between layers
02 - Bars should not jiggle in center when done
03 - Use fresh grapefruit for best flavor
