Pineapple Lemonade (Print version)

Fresh Pineapple Lemonade made with real lemon juice, pineapple, and simple syrup for a cold sweet-tart drink.

# Ingredients:

For the lemonade

01 - 1 1/2 cups (250 g) fresh pineapple chunks
02 - 3/4 cup (180 ml) pineapple juice, chilled
03 - 3/4 cup (180 ml) fresh lemon juice, from about 4-5 lemons
04 - 3 cups (720 ml) cold water
05 - 3/4 cup (180 ml) simple syrup, plus more to taste
06 - 2 cups ice, for serving

For garnish

07 - Fresh mint sprigs
08 - Pineapple wedges or lemon wheels

# Instructions:

01 - Roll the lemons firmly on the counter, cut them in half, and squeeze until you have 3/4 cup fresh lemon juice. Strain out seeds.
02 - Add the pineapple chunks and pineapple juice to a blender. Blend on high until smooth and foamy, about 30-45 seconds.
03 - Pour the blended pineapple through a fine mesh strainer into a bowl or measuring cup. Press gently to collect the juice and leave the fibrous pulp behind.
04 - In a large pitcher, stir together the strained pineapple juice, lemon juice, cold water, and 3/4 cup simple syrup.
05 - Taste the lemonade cold. Add more simple syrup for sweetness, more lemon juice for tartness, or a splash of water if it tastes too strong.
06 - Fill glasses with ice and pour the Pineapple Lemonade over the top. Garnish with mint, pineapple wedges, or lemon wheels.

# Good to know:

01 - Best served very cold, over fresh ice.
02 - For sparkling lemonade, replace the water with chilled club soda right before serving.
03 - Stir before serving because fresh pineapple juice can settle.
