Sweet Pineapple Jalapeño Relish (Print Version)

# Ingredients:

01 - 3 cups fresh pineapple, diced
02 - 1 cup jalapeño peppers, thinly sliced

→ Liquid Base

03 - 1 cup apple cider vinegar
04 - 2 cups granulated sugar
05 - 2 tablespoons lemon juice

→ Seasonings

06 - 1 teaspoon mustard seeds
07 - ½ teaspoon turmeric powder
08 - 1 tablespoon grated ginger
09 - 2 cloves garlic, finely chopped

# Instructions:

01 - Combine vinegar, sugar, lemon juice, and all your seasonings in a large saucepan. Bring to a boil, then reduce heat and simmer until sugar dissolves completely.
02 - Add your pineapple and jalapeños to the pot. Let it all simmer over medium heat for about 20 minutes until the pineapple softens and the liquid gets syrupy.
03 - While your relish cooks, sterilize your jars and lids in boiling water for at least 5 minutes.
04 - Fill your hot jars with the relish mixture, leaving proper headspace. Clean the rims, secure the lids, and process in a hot water bath for 10 minutes.
05 - Let your jars cool completely, check the seals, then store in a cool, dark place.
