Savory Philly Steak Cheese Fries with Peppers and Onions (Print version)

# Ingredients:

For the fries

01 - 1 bag (28 oz or 790 g) frozen waffle fries
02 - 1 tablespoon olive oil, for the pan

For the steak and vegetables

03 - 1 lb (450 g) shaved ribeye or very thinly sliced sirloin
04 - 1 teaspoon kosher salt
05 - 1/2 teaspoon black pepper
06 - 1/2 teaspoon garlic powder
07 - 1/2 teaspoon smoked paprika
08 - 1 tablespoon unsalted butter
09 - 1 medium yellow onion, thinly sliced
10 - 1 green bell pepper, thinly sliced

For topping

11 - 8 slices white American cheese
12 - 4 slices provolone cheese
13 - 2 tablespoons chopped chives or parsley
14 - Pickled peppers, optional for serving

# Instructions:

01 - Heat the oven to 425°F. Spread the waffle fries on a large sheet pan and bake according to the package directions until deeply golden and crisp, usually 20-25 minutes.
02 - Pat the steak dry. Toss it with salt, black pepper, garlic powder, and smoked paprika right before cooking.
03 - Heat olive oil in a large skillet over medium-high heat. Add the steak in an even layer and cook for 2-4 minutes, stirring once or twice, until browned and just cooked through. Transfer to a plate.
04 - Add butter to the same skillet. Add the onion and green bell pepper and cook for 5-7 minutes, stirring often, until the onion softens and the pepper is tender-crisp.
05 - Move the hot fries to an oven-safe skillet or baking dish. Add half of the American cheese, then the steak, peppers, onions, provolone, and remaining American cheese.
06 - Return the pan to the oven for 5-7 minutes, until the cheese is melted and bubbling. Rest for 2 minutes, then top with chives or parsley and serve hot.
