Pesto Parmesan Baked Cod (Print Version)

# Ingredients:

01 - 4 cod fillets (6 oz each)

→ Sauce & Seasonings

02 - ½ cup fresh basil pesto
03 - ¼ cup grated Parmesan cheese
04 - 2 tablespoons olive oil
05 - 1 teaspoon garlic powder
06 - ½ teaspoon black pepper
07 - ½ teaspoon salt

→ Garnish

08 - 1 lemon, sliced
09 - Fresh basil leaves

# Instructions:

01 - Preheat your oven to 400°F (200°C).
02 - Lightly grease a baking dish with 1 tablespoon of olive oil to prevent sticking.
03 - Pat dry the cod fillets with paper towels. In a small bowl, mix together the garlic powder, black pepper, and salt. Sprinkle the seasoning evenly across both sides of the cod.
04 - Place the seasoned cod fillets in the prepared baking dish. Spread an even layer of fresh basil pesto over each fillet, making sure to cover the top and sides.
05 - Sprinkle the grated Parmesan cheese evenly over the pesto-coated fillets. Drizzle the remaining tablespoon of olive oil over the Parmesan for extra flavor and crispiness during baking.
06 - Place the baking dish in the preheated oven and bake for about 15-20 minutes, or until the cod is opaque and flakes easily with a fork.
07 - Once baked, remove the dish from the oven and garnish with fresh lemon slices and basil leaves. Serve immediately with your choice of side, such as quinoa or steamed vegetables.
