Pepperoncini Chicken Skillet (Print Version)

# Ingredients:

01 - 2 tablespoons butter.
02 - 2 pounds chicken, cut in strips.
03 - 1 teaspoon sea salt.
04 - 1 teaspoon ground pepper.
05 - 1 white onion, diced.
06 - 2 tablespoons garlic, diced.
07 - 1/2 cup chicken stock.
08 - 1/2 cup roasted red peppers, sliced.
09 - 1 cup heavy cream.
10 - 1/2 cup parmesan cheese, shredded.
11 - 1 tablespoon Italian seasoning.
12 - 1/2 cup pepperoncini peppers, drained.

# Instructions:

01 - Melt butter in large heavy pan over medium-high heat.
02 - Season chicken with salt and pepper, brown for 8 minutes, then remove.
03 - Cook garlic and onion until brown, about 5 minutes.
04 - Add stock and red peppers, reduce by half for 5 minutes.
05 - Turn off heat, whisk in cream and parmesan.
06 - Return to heat, add seasonings, pepperoncini and chicken. Cook until chicken reaches 165°F.

# Notes:

01 - Can add stock to thin sauce if needed.
02 - Serve over pasta, rice or vegetables.
03 - Use whole or sliced pepperoncini as preferred.
