Peppermint Meltaways (Print Version)

# Ingredients:

01 - 1 cup butter, softened.
02 - 1/2 cup confectioners' sugar.
03 - 1/2 teaspoon peppermint extract.
04 - 1 1/4 cups all-purpose flour.
05 - 1/2 cup cornstarch.
06 - 2 tablespoons butter, softened (for frosting).
07 - 2 tablespoons 2% milk.
08 - 1/4 teaspoon peppermint extract (for frosting).
09 - 2-3 drops red food coloring (optional).
10 - 1 1/2 cups confectioners' sugar (for frosting).
11 - 1/2 cup crushed peppermint candies.

# Instructions:

01 - Cream butter and sugar until fluffy, 3-4 minutes. Beat in extract. Whisk flour and cornstarch, then gradually beat into mixture.
02 - Refrigerate covered for 30 minutes until firm enough to handle.
03 - Shape into 1-inch balls, place 2 inches apart. Bake at 350°F for 9-11 minutes until bottoms are light brown.
04 - Beat butter until creamy. Add milk, extract and optional food coloring. Gradually beat in sugar until smooth.
05 - Spread frosting on cooled cookies. Sprinkle with crushed peppermint candies.
