In a large bowl, beat the peanut butter, softened butter, brown sugar, and granulated sugar for 2 minutes, until creamy and a little lighter in color.

Beat in the egg and vanilla until smooth. Scrape the bowl well so the peanut butter mixture is even.

Whisk the flour, baking soda, and salt in a separate bowl. Add to the wet mixture and mix on low just until no dry streaks remain. Fold in mini chocolate chips or nuts if using.

Cover and chill the dough for 20-30 minutes. Heat the oven to 350°F (175°C) and line two baking sheets with parchment. Scoop 1-tablespoon portions and roll into balls.

Place dough balls 2 inches apart. Dip a fork in a little granulated sugar and press each ball lightly in a crisscross pattern until about 1/2 inch thick.

Bake for 8-10 minutes, until the edges are set and the centers still look soft. Cool on the baking sheet for 5 minutes, then transfer to a rack.
