Easy Lasagna Soup (Print Version)

# Ingredients:

01 - 1/2 pound lean ground beef.
02 - 1/2 pound ground Italian sausage.
03 - Salt and pepper to taste.
04 - 1 yellow onion, chopped.
05 - 1 Tablespoon olive oil.
06 - 3 cloves garlic, minced.
07 - 2 Tablespoons tomato paste.
08 - 24 ounce marinara sauce.
09 - 1/4 teaspoon red pepper flakes.
10 - 2 Tablespoons fresh parsley.
11 - 1/2 teaspoon dried oregano.
12 - 1 teaspoon dried basil.
13 - 7 cups low sodium chicken broth.
14 - 9 lasagna noodles, broken.
15 - 2 cups fresh spinach (optional).
16 - 10 ounces ricotta cheese.
17 - 1 cup shredded mozzarella cheese.
18 - 1/2 cup grated parmesan cheese.
19 - Fresh basil for serving.

# Instructions:

01 - Brown ground beef and Italian sausage in large pot over medium-high heat. Season with salt and pepper. Drain and set aside.
02 - In same pot, heat oil and saute onion for 5 minutes. Add garlic and cook 1-2 minutes more.
03 - Add tomato paste, marinara, seasonings, and broth. Return meat to pot. Bring to boil.
04 - Add broken lasagna noodles. Reduce heat and cook until noodles are tender. Add spinach if using.
05 - Mix ricotta, mozzarella, and parmesan in a bowl.
06 - Ladle soup into bowls. Top with cheese mixture and fresh basil.

01 - Cook meat thoroughly before adding liquids.
02 - Break noodles evenly for uniform cooking.
03 - Add spinach at end to maintain freshness.
04 - Don't overcook noodles to prevent mushiness.
