Pancake Sausage Cheese Bites (Print version)

Fluffy mini pancake muffins packed with breakfast sausage, cheddar, and maple for a warm sweet-savory bite.

# Ingredients:

For the sausage filling

01 - 1 lb (450 g) breakfast sausage, pork or turkey
02 - 1/4 teaspoon black pepper

For the pancake batter

03 - 2 cups (240 g) complete pancake mix
04 - 1 cup (240 ml) milk
05 - 2 large eggs
06 - 1/4 cup (60 ml) maple syrup
07 - 1 cup (115 g) shredded cheddar cheese
08 - Nonstick cooking spray or softened butter, for the pan

For serving

09 - Warm maple syrup, for dipping

# Instructions:

01 - Preheat the oven to 400°F. Grease a 24-cup mini muffin pan well with nonstick spray or softened butter.
02 - Cook the sausage in a skillet over medium heat for 7-9 minutes, breaking it into small crumbles, until no pink remains. Drain off excess grease and let it cool for a few minutes.
03 - In a large bowl, whisk the milk, eggs, maple syrup, and black pepper until smooth.
04 - Add the pancake mix and stir just until combined. Do not beat the batter smooth. A few small lumps are fine.
05 - Fold in the cooked sausage and shredded cheddar until evenly scattered through the batter.
06 - Spoon the batter into the prepared mini muffin cups, filling each about three-quarters full.
07 - Bake for 12-15 minutes, until the tops spring back lightly, the edges are golden, and a toothpick inserted in the center comes out clean.
08 - Let the bites cool in the pan for 5 minutes, then loosen them with a small offset spatula. Serve warm with maple syrup for dipping.

# Good to know:

01 - Makes about 24 mini bites, or 8 servings of 3 bites each.
02 - Cool completely before refrigerating or freezing.
03 - Reheat gently so the cheese softens without drying the pancake crumb.
