Easy Oven Chicken and Rice (Print Version)

# Ingredients:

→ Main Ingredients

01 - 5 bone in chicken thigh fillets, skin removed
02 - 1 onion, chopped (brown, white or yellow)
03 - 2 large cloves garlic, minced
04 - 2 tbsp (30g) butter (or olive oil)
05 - 1 1/2 cups (270g) uncooked white rice
06 - 1 1/2 cups (375 ml) hot chicken broth/stock
07 - 1 1/4 cups (315 ml) hot water

→ Chicken Rub

08 - 1 tsp paprika powder
09 - 1 tsp dried thyme
10 - 1/2 tsp garlic powder
11 - 1/2 tsp onion powder
12 - 3/4 tsp salt
13 - Black pepper to taste

→ Optional Garnish

14 - Oil spray
15 - Fresh thyme leaves or finely chopped parsley

# Instructions:

01 - Preheat oven to 180°C/350°F.
02 - Scatter onion and garlic in a baking dish (about 10 x 15" / 25 x 35 cm), then place butter in the centre. Bake for 15 minutes (check at 12 minutes, mix if some bits are browning too much).
03 - Meanwhile, mix together the Chicken Rub ingredients. Sprinkle on both sides of the chicken.
04 - Remove baking dish from the oven. Add rice then mix.
05 - Place chicken on rice. Then pour chicken broth and water around the chicken.
06 - Cover with foil, then bake for 30 minutes. Remove foil, spray chicken with oil (optional, gives chicken nicer finish), then bake for a further 20 minutes until liquid is absorbed.
07 - Stand for 5 minutes, then remove chicken and fluff up rice. Garnish with parsley or thyme if desired, serve and enjoy!

# Notes:

01 - Dish is flavored enough to serve without sauce, but if you want to take it over the top, make a quick gravy in 4 minutes flat.
02 - If scaling recipe up, use multiple pans. If scaling recipe down, use a smaller pan.
03 - Chicken Rub can be substituted with any seasonings you want such as Lemon Pepper Seasoning or Italian Herb Mix.
04 - For boneless skinless thigh fillets or breast - put the rice in the oven covered with foil WITHOUT chicken. Bake for 30 minutes, then remove pan, take foil off, top with chicken and return to oven (no foil) for 20-25 minutes more.
05 - For brown rice - add an extra 1/2 cup hot water. Bake covered for 1 hour then bake uncovered 15 minutes until rice is tender.
