Fresh Orange Vanilla Muffins (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 3 cups all-purpose flour
02 - 1 cup sugar
03 - 1 tablespoon baking powder
04 - ¾ teaspoon salt

→ Wet Ingredients

05 - ½ cup (1 stick) butter, softened
06 - 2 eggs, room temperature
07 - ½ cup milk, room temperature
08 - ½ cup fresh-squeezed orange juice
09 - 1 tablespoon pure vanilla extract
10 - 1 tablespoon orange zest

# Instructions:

01 - Preheat oven to 400°F. Line 16 muffin cups with paper liners.
02 - Whisk together flour, sugar, baking powder, and salt in large bowl.
03 - Work in softened butter, then blend in eggs, milk, orange juice, vanilla, and zest until just incorporated. Don't overbeat.
04 - Divide batter between prepared muffin cups. Bake 15-20 minutes until toothpick comes out clean.
05 - Remove from pans after few minutes and cool on wire rack, or serve warm with butter.

01 - Uses juice and zest from about 2 large naval oranges
02 - Best eaten fresh
03 - Keeps 2 days at room temperature, then refrigerate
