Onion-Wrapped Flying Dutchman (Print Version)

Savor an onion-wrapped burger with caramelized flavors, melty cheese, and juicy beef patties.

# Ingredients:

→ Spread

01 - 1/3 cup mayonnaise
02 - 4 tablespoons pickle relish, drained
03 - 3 tablespoons ketchup
04 - 1 teaspoon sugar
05 - 1 tablespoon white vinegar
06 - 1 teaspoon yellow mustard, optional

→ Patties

07 - 1 pound 80/20 ground beef
08 - salt, to taste
09 - black pepper, to taste
10 - 2 tablespoons butter, split in half
11 - 2 tablespoons vegetable oil
12 - yellow mustard, for frying
13 - 2 American cheese slices

→ Caramelized Onions

14 - 1 large yellow onion, cut into circular slices
15 - salt, to taste
16 - white sugar, to taste
17 - vegetable oil
18 - 2 American cheese slices

# Instructions:

01 - In a small bowl, mix together the mayonnaise, relish, ketchup, sugar, and vinegar until combined into a pink-colored mixture. Set aside.
02 - Weigh out 8 portions of 3 to 4 ounces of ground beef. Gently flatten each portion into a circular patty, ensuring not to overmix or mold it. Season both sides with salt and pepper. Set aside.
03 - Heat vegetable oil in a large pan or flat grill over medium to medium-low heat. Once the oil is hot, add the onion slices and sprinkle with sugar and salt. Cook until the edges turn golden, then flip gently to caramelize the other side. Before removing from heat, place cheese on half of the onion slices and let it melt.
04 - Heat vegetable oil and/or butter in a skillet or pan over medium-high heat. Add the patties and optionally spread a teaspoon of mustard on the raw side of each patty. Cook for 2-3 minutes until a brown crust forms, then flip. Add a slice of American cheese on half of the patties and cook for 1 more minute. Stack a patty without cheese on top of a patty with cheese to create a double burger. Place the stacked patties onto one of the cheese-topped onion buns, then add another onion bun on top to serve.
