Press a pie crust into a tart pan. Prick the bottom and sides of the crust with a fork. Pre-bake in a preheated oven at 200°C for 10 minutes.

In a mixing bowl, crack and lightly whisk an egg. Add the cottage cheese, grated parmigiano, and salt. Stir well to combine.

Peel and thinly slice the pearl onions lengthways. Lightly brush the top side of the slices with olive oil.

Remove the pre-baked crust from the oven. Spread the cheese and egg mixture evenly over the base.

Arrange the thinly sliced onions over the filling, with the oiled side facing up. Dust with freshly cracked black pepper.

Return the tart to the oven and bake for 30-35 minutes at 200°C, until the filling is set and the top is golden brown.
