Creamy Chicken Gnocchi Soup (Print Version)

# Ingredients:

01 - 3-4 boneless skinless chicken breasts, cooked and diced
02 - 16 ounces potato gnocchi
03 - 2 cups half and half
04 - 4 cups low sodium chicken broth

→ Vegetables

05 - 1 stalk celery, chopped
06 - ½ white onion, diced
07 - ½ cup shredded carrots
08 - 1 cup fresh spinach, roughly chopped
09 - 2 teaspoons minced garlic

→ Seasonings

10 - 1 tablespoon olive oil
11 - 1 teaspoon thyme
12 - Salt and pepper to taste

# Instructions:

01 - Heat up your olive oil in a big pot over medium heat. Toss in the celery, onion, garlic, and carrots. Let them cook for a few minutes until those onions go clear.
02 - Throw in your chicken, broth, seasonings, and bring it all to a bubble. Drop in the gnocchi and let it cook for about 3-4 minutes, then turn down the heat and simmer for 10 more minutes.
03 - Pour in the half and half, add your spinach, and cook just until the spinach gets tender - about 2 minutes. Give it a taste and add more salt and pepper if needed.
