Neapolitan Cookies (Print Version)

# Ingredients:

01 - 2 1/2 cups all-purpose flour.
02 - 1/2 teaspoon baking powder.
03 - 1/2 teaspoon salt.
04 - 1 cup unsalted butter, softened.
05 - 1 cup granulated sugar.
06 - 1 large egg plus 1 egg yolk.
07 - 1 1/2 teaspoons vanilla extract.
08 - 1 1/2 tablespoons flour for strawberry layer.
09 - 1 tablespoon strawberry jam.
10 - 1/2 teaspoon almond extract.
11 - Pink food coloring.
12 - 1 1/2 tablespoons cocoa powder.
13 - 1 ounce semi-sweet chocolate, melted.

# Instructions:

01 - Whisk flour, baking powder, and salt together.
02 - Beat butter and sugar until creamy, add eggs and vanilla. Mix in dry ingredients.
03 - Split dough into three equal portions (about 10 ounces each).
04 - Mix one portion with flour, jam, extracts, and food coloring.
05 - Mix another portion with cocoa powder and melted chocolate.
06 - Press layers into lined loaf pan: strawberry, vanilla, chocolate.
07 - Refrigerate at least 3 hours or freeze 1 hour.
08 - Cut into 1/2 inch slices, trim edges if desired.
09 - Bake at 350°F for 11-13 minutes until edges are lightly browned.

01 - Use gel food coloring for best results.
02 - Can be made ahead and frozen.
03 - Optional chocolate dipping after baking.
