No-bake oat and peanut butter energy bites with chocolate chips and colorful candy pieces, ready in about 15 minutes.

# Ingredients:

For the bites

01 - 1 1/2 cups (135 g) certified gluten-free old-fashioned rolled oats
02 - 2/3 cup (170 g) creamy peanut butter, well stirred
03 - 1/3 cup (113 g) honey
04 - 1 teaspoon vanilla extract
05 - 1/4 cup (28 g) ground flaxseed
06 - 1/4 teaspoon fine salt

Mix-ins

07 - 1/3 cup (65 g) mini candy-coated chocolates, gluten-free if needed
08 - 1/4 cup (42 g) mini chocolate chips

For adjusting, if needed

09 - 1-2 teaspoons water or extra honey, only if the mixture feels dry
10 - 1-2 tablespoons rolled oats, only if the mixture feels too sticky

# Instructions:

01 - In a large bowl, stir the peanut butter, honey, vanilla, and salt until smooth and glossy.
02 - Add the rolled oats and ground flaxseed. Stir until the oats are fully coated and the mixture looks evenly moistened.
03 - Let the bowl sit for 5 minutes so the oats and flaxseed can absorb some moisture. This makes the bites easier to roll.
04 - Stir in the mini candy-coated chocolates and mini chocolate chips. If the mixture crumbles, add water or honey 1 teaspoon at a time. If it is too sticky, add oats 1 tablespoon at a time.
05 - Scoop 1 tablespoon portions and roll firmly into 1-inch balls. You should get about 18 bites.
06 - Refrigerate for at least 20 minutes before serving. Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 2 months.
