Mom's Turkey Soup (Print Version)

# Ingredients:

01 - 1 leftover turkey carcass with drippings.
02 - 1 large yellow onion, cut in wedges.
03 - 2 carrots, roughly chopped.
04 - 2 celery ribs with leaves, chopped.
05 - 4 sprigs fresh parsley.
06 - 2 sprigs fresh thyme or 1 tsp dried.
07 - 1 bay leaf.
08 - 8 whole peppercorns.
09 - 2 tbsp butter.
10 - 2 garlic cloves, minced.
11 - 2 tsp poultry seasoning.
12 - 6 oz egg noodles (optional).
13 - 3 cups cooked turkey meat, shredded.
14 - Salt and pepper to taste.

# Instructions:

01 - Place turkey carcass in a large pot and cover with cold water. Add onion, carrots, celery, herbs, and peppercorns.
02 - Bring to boil, then reduce heat. Simmer for 4 hours, skimming foam occasionally.
03 - Remove bones and vegetables. Strain stock through a fine mesh strainer.
04 - In a clean pot, melt butter and cook fresh carrots, onions, and celery until soft, about 10 minutes.
05 - Pour in strained stock, add seasonings, and simmer until vegetables are tender.
06 - Add noodles if using, cook until done. Stir in shredded turkey meat and heat through.
