Mom's Chicken Scampi with Garlic Parmesan Rice (Print version)

# Ingredients:

For the chicken

01 - 1 1/2 lb (680 g) boneless skinless chicken breasts, sliced into thin cutlets
02 - 1 teaspoon kosher salt, divided
03 - 1/2 teaspoon black pepper
04 - 1 teaspoon Italian seasoning
05 - 2 tablespoons all-purpose flour
06 - 1 tablespoon olive oil

For the garlic parmesan rice

07 - 3 tablespoons unsalted butter, divided
08 - 5 cloves garlic, minced
09 - 1 cup (185 g) long-grain white rice, rinsed
10 - 2 cups (480 ml) low-sodium chicken broth
11 - 1/3 cup (80 ml) dry white wine or additional chicken broth
12 - 1/2 teaspoon lemon zest
13 - 1/4 teaspoon red pepper flakes, optional
14 - 3/4 cup (75 g) finely grated parmesan cheese
15 - 1 tablespoon fresh lemon juice, plus more to taste
16 - 2 tablespoons chopped fresh parsley

# Instructions:

01 - Pat the chicken dry. Season with 1/2 teaspoon salt, pepper, and Italian seasoning, then dust lightly with flour on both sides.
02 - Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 3-4 minutes per side until golden and nearly cooked through. Transfer to a plate.
03 - Reduce heat to medium. Add 2 tablespoons butter and the garlic to the skillet. Cook for 30 seconds, then stir in the rinsed rice until glossy.
04 - Add chicken broth, wine, lemon zest, red pepper flakes, and the remaining 1/2 teaspoon salt. Bring to a simmer, cover, and cook over low heat for 16-18 minutes until the rice is tender.
05 - Nestle the chicken back into the skillet during the last 4-5 minutes of cooking. Cook until the chicken reaches 165°F and the rice has absorbed the liquid.
06 - Remove from heat and rest covered for 5 minutes. Stir in parmesan, lemon juice, parsley, and the remaining 1 tablespoon butter. Taste and add more lemon or salt if needed.
