Holiday Cookies (Print Version)

# Ingredients:

01 - ¾ cup unsalted butter, softened.
02 - ½ cup granulated sugar.
03 - ¼ cup dark brown sugar.
04 - ⅓ cup molasses.
05 - 1 egg.
06 - 2¼ cups all-purpose flour.
07 - 2 teaspoons baking soda.
08 - 2 teaspoons ground ginger.
09 - 1 teaspoon ground cinnamon.
10 - 1 teaspoon ground cloves.
11 - ½ teaspoon salt.
12 - ½ cup turbinado sugar for rolling.
13 - 24 large marshmallows.

# Instructions:

01 - Cream butter and sugars until fluffy. Mix in molasses and egg. Combine dry ingredients separately, then mix into wet ingredients.
02 - Form dough into ball, wrap in plastic, and refrigerate at least 1½ hours.
03 - Heat oven to 350°F. Line baking sheets with parchment.
04 - Flatten 2-3 tablespoons dough, wrap around marshmallow, roll in turbinado sugar.
05 - Bake 9-10 minutes until cracked and marshmallow shows. Cool 10 minutes on pan then transfer to rack.

# Notes:

01 - Don't overbake or marshmallow will completely melt.
02 - Cookies will flatten as they cool.
