Easy Mini Reubens Appetizer (Print version)

Classic mini Reuben bites with corned beef, sauerkraut, Swiss, and Thousand Island on cocktail rye, broiled in 5 minutes for easy entertaining.

# Ingredients:

For the mini Reubens

01 - 1 (1 lb / 450 g) loaf cocktail rye bread
02 - 1 cup (240 ml) Thousand Island dressing
03 - 1 1/2 lb (680 g) deli sliced corned beef
04 - 1 (16 oz / 454 g) jar sauerkraut, rinsed and well drained
05 - 1 lb (450 g) sliced Swiss cheese

# Instructions:

01 - Set an oven rack 4 to 6 inches from the broiler element and line a baking sheet with foil.
02 - Lay cocktail rye slices in a single layer on the prepared baking sheet, close but not overlapping.
03 - Spread about 2 teaspoons of Thousand Island dressing on each slice. Top with a folded piece of corned beef, a small pinch of drained sauerkraut, and a quarter slice of Swiss cheese trimmed to fit.
04 - Broil for 3 to 5 minutes, rotating the pan once, until the cheese is melted and lightly golden. Serve warm.

# Good to know:

01 - Serve warm while the cheese is still soft and stretchy.
02 - Squeeze the sauerkraut very dry for the crispiest base.
