# Ingredients:

For the meatloaf muffins

01 - 1 1/2 lb (680 g) ground beef, 85/15 lean
02 - 3/4 cup (75 g) plain breadcrumbs
03 - 2 large eggs
04 - 3 tablespoons milk
05 - 1 cup (240 g) ketchup, divided
06 - 1 tablespoon Worcestershire sauce
07 - 2 teaspoons dried minced onion
08 - 1 teaspoon garlic powder
09 - 1 teaspoon kosher salt
10 - 1/2 teaspoon black pepper

For the mashed potato frosting

11 - 2 lb (900 g) russet potatoes, peeled and cubed
12 - 4 tablespoons unsalted butter
13 - 1/2 cup (120 ml) warm milk, plus more as needed
14 - 1/2 teaspoon salt
15 - 1/4 teaspoon black pepper
16 - Fresh chopped parsley or chives, for garnish

# Instructions:

01 - In a large bowl, gently combine the ground beef, breadcrumbs, eggs, milk, 1/2 cup ketchup, Worcestershire sauce, dried onion, garlic powder, salt, and pepper. Use your hands and mix just until evenly distributed. Do not overwork.
02 - Lightly grease a 12-cup standard muffin tin. Divide the meat mixture evenly among the cups, pressing gently to level the tops.
03 - Spread the remaining 1/2 cup ketchup over the tops of the muffins. Bake at 375 degrees F (190 degrees C) for 20 to 25 minutes, until the internal temperature reaches 160 degrees F (71 degrees C). Let rest in the tin for 5 minutes.
04 - While the muffins bake, boil the potatoes in salted water until fork-tender, about 15 minutes. Drain thoroughly and return to the pot. Mash in the butter and warm milk until smooth and pipeable. Season with salt and pepper.
05 - Transfer the warm mashed potatoes to a piping bag with a large star tip. Swirl a generous mound onto each meatloaf muffin. Garnish with chopped parsley or chives and serve warm.
