Mini Apple Pie Bites (Print version)

Flaky Mini Apple Pie Bites filled with diced apples, cinnamon, brown sugar, and butter, baked until golden and warm.

# Ingredients:

For the apple filling

01 - 2 medium firm apples, peeled, cored, and diced into 1/4-inch pieces, about 2 cups (250 g)
02 - 1/4 cup (50 g) packed light brown sugar
03 - 1 tablespoon all-purpose flour
04 - 1 teaspoon ground cinnamon
05 - 1/8 teaspoon ground nutmeg
06 - 1 teaspoon fresh lemon juice
07 - 1/2 teaspoon vanilla extract
08 - 1 pinch fine salt

For the pastry

09 - 1 can (8 oz or 226 g) refrigerated crescent roll dough, 8-count
10 - 2 tablespoons (28 g) unsalted butter, melted
11 - 1 tablespoon coarse sugar or granulated sugar, optional

# Instructions:

01 - Preheat the oven to 375 degrees F. Line a rimmed baking sheet with parchment paper.
02 - In a medium bowl, stir together the diced apples, brown sugar, flour, cinnamon, nutmeg, lemon juice, vanilla, and salt until evenly coated.
03 - Unroll the crescent dough and separate it into 8 triangles. Arrange them on the prepared baking sheet with the wide ends facing you.
04 - Spoon about 1 tablespoon of apple filling onto the wide end of each triangle. Roll each triangle toward the tip, tucking in loose edges to hold the filling.
05 - Brush the tops with melted butter and sprinkle with coarse sugar if using.
06 - Bake for 11-13 minutes, until puffed and golden brown. Cool on the pan for 5 minutes before serving because the filling will be hot.
