Ground beef, veggies, spices, and savory cornbread combine for a bold, comforting southwest-inspired casserole.

# Ingredients:

→ Main Filling

01 - 1 tablespoon extra virgin olive oil
02 - 680 grams lean ground beef
03 - 1 medium onion, finely chopped
04 - 1 green bell pepper, seeds and stem removed, chopped
05 - 0.5 teaspoon fine sea salt
06 - 2 teaspoons chili powder, adjust to taste
07 - 2 teaspoons ground cumin, adjust to taste
08 - 410 grams canned fire-roasted tomatoes
09 - 113 grams canned green Anaheim chiles, drained and chopped
10 - 425 grams canned whole kernel corn, drained
11 - 113 grams canned sliced ripe olives, drained
12 - 53 grams raisins
13 - 115 grams sharp cheddar cheese, freshly grated
14 - 80 millilitres water

→ Cornbread Topping

15 - 454 grams prepared cornbread mix
16 - Water, egg, oil, or milk as required by cornbread mix instructions

# Instructions:

01 - Set oven temperature to 190°C.
02 - In a large skillet over medium-high heat, warm olive oil. Add ground beef, onion, and green bell pepper. Sprinkle with salt, chili powder, and cumin. Cook, stirring occasionally, until beef is evenly browned.
03 - Remove skillet from heat and carefully drain excess fat, if present.
04 - Stir in fire-roasted tomatoes, chopped Anaheim chiles, corn, sliced olives, raisins, grated cheddar, and water. Taste and adjust seasoning with additional chili powder or cumin if desired.
05 - Lightly oil the interior of a 23 x 33 centimetre baking dish or coat with nonstick spray. Evenly distribute the beef mixture into the prepared dish.
06 - In a large mixing bowl, combine cornbread mix with water, egg, oil, or milk according to package instructions until smooth.
07 - Carefully pour cornbread batter over the beef mixture, spreading into an even layer.
08 - Transfer casserole to preheated oven. Bake for 40 minutes or until cornbread topping is golden brown.

# Notes:

01 - Test cornbread topping for doneness by inserting a toothpick in the centre; it should come out clean when fully cooked.
