Mexican Drink (Print Version)

# Ingredients:

01 - 4 cups milk.
02 - 2 ounces piloncillo.
03 - 2 discs (3 oz each) Mexican chocolate.
04 - 1 cinnamon stick.
05 - 1½ cups warm water.
06 - ½ cup masa harina.
07 - 2 teaspoons vanilla extract.
08 - ⅛ teaspoon fine salt.

# Instructions:

01 - Combine milk, piloncillo, chocolate and cinnamon in saucepan. Heat until piloncillo and chocolate dissolve, stirring frequently.
02 - Remove and discard cinnamon stick, straining if needed.
03 - Whisk masa harina with warm water until smooth. Add to pot with vanilla and salt.
04 - Simmer on low 15-20 minutes, whisking often, until thick and creamy. Should coat back of spoon.
05 - Optional: blend with immersion blender for extra smoothness. Serve with ground cinnamon garnish.

# Notes:

01 - Can use alternative milks for dairy-free version.
02 - Will thicken as it cools.
