Fresh Mediterranean Salmon (Print Version)

# Ingredients:

→ Salmon

01 - 4 salmon fillets (7 oz each)
02 - 1 lemon, sliced
03 - 2 teaspoons garlic powder
04 - 2 teaspoons dried basil
05 - 2 teaspoons dried oregano
06 - 1 teaspoon dried parsley
07 - 1/2 teaspoon onion powder
08 - 1/2 teaspoon kosher salt
09 - 1/4 teaspoon pepper

→ Mediterranean Topping

10 - 1/2 cup kalamata olives
11 - 1/2 cup cherry tomatoes, diced
12 - 1/3 cup feta cheese
13 - 1 tablespoon fresh parsley, chopped
14 - 1 tablespoon fresh mint, chopped
15 - 1 tablespoon olive oil
16 - Salt and pepper to taste

# Instructions:

01 - Preheat oven to 400°F
02 - Mix seasonings in a small bowl. Pat salmon dry with paper towels, then sprinkle about 1 teaspoon seasoning on each fillet
03 - Place salmon in oiled cast iron skillet and arrange lemon slices around it
04 - Bake for 12-15 minutes or until internal temperature reaches 145°F
05 - Combine all Mediterranean topping ingredients in a small bowl
06 - Drizzle salmon with Mediterranean dressing and top with olive-feta mixture. Serve with couscous salad if desired

# Notes:

01 - Can be cooked in air fryer at 400°F for 8-10 minutes
02 - Cooked salmon lasts up to 3 days in fridge
03 - Pairs well with Mediterranean couscous salad
