Meat Lovers Deep Dish Pizza (Print version)

A hearty deep dish pizza with a buttery crust, gooey mozzarella, sausage, beef, bacon, pepperoni and chunky tomato sauce.

# Ingredients:

For the crust

01 - 2 1/4 teaspoons instant yeast
02 - 1 teaspoon granulated sugar
03 - 1 cup (240 ml) warm water, about 105°F-110°F
04 - 2 1/2 cups (315 g) bread flour, plus more as needed
05 - 1/4 cup (35 g) fine yellow cornmeal
06 - 1 1/2 teaspoons kosher salt
07 - 3 tablespoons olive oil, divided
08 - 1 tablespoon unsalted butter, softened, for the pan

For the sauce

09 - 1 tablespoon olive oil
10 - 3 cloves garlic, minced
11 - 1 can (28 oz or 795 g) crushed tomatoes
12 - 1 teaspoon dried oregano
13 - 1/2 teaspoon kosher salt
14 - 1/2 teaspoon granulated sugar
15 - 1/4 teaspoon crushed red pepper flakes, optional

For the meat filling

16 - 8 oz (225 g) Italian sausage, casing removed
17 - 8 oz (225 g) ground beef
18 - 6 slices bacon, cooked crisp and chopped
19 - 3 oz (85 g) sliced pepperoni
20 - 12 oz (340 g) low-moisture mozzarella, sliced or shredded
21 - 1/3 cup (30 g) grated parmesan cheese

# Instructions:

01 - Stir the yeast, sugar and warm water together in a large bowl. Add the bread flour, cornmeal, salt and 2 tablespoons olive oil. Mix until shaggy, then knead for 5-7 minutes until smooth and elastic.
02 - Place the dough in a lightly oiled bowl, cover and let rise in a warm spot for 60-75 minutes, until puffy and nearly doubled.
03 - Warm 1 tablespoon olive oil in a saucepan over medium heat. Add the garlic and cook for 30 seconds. Stir in crushed tomatoes, oregano, salt, sugar and red pepper flakes. Simmer for 10-15 minutes until thick.
04 - Cook the sausage and ground beef in a skillet over medium-high heat, breaking them up, until fully browned and no pink remains. Drain well. Cook the bacon separately until crisp if it is not already cooked.
05 - Heat the oven to 425°F. Coat a 10-inch cast iron skillet or deep cake pan with softened butter and the remaining olive oil. Press the dough across the bottom and 1 1/2 inches up the sides.
06 - Layer the mozzarella over the dough. Add the sausage, beef, bacon and pepperoni. Spoon the thick tomato sauce over the meat and sprinkle parmesan on top.
07 - Bake for 30-35 minutes, until the crust is deep golden brown and the sauce is bubbling. Rest for 10-15 minutes before loosening the edges and slicing into wedges.
