Maurice Salad with Dressing (Print Version)

A flavorful Maurice Salad with ham, turkey, Swiss cheese, and a creamy tangy dressing.

# Ingredients:

→ Dressing

01 - 1 cup mayonnaise
02 - 1 1/2 teaspoons lemon juice
03 - 2 teaspoons white vinegar
04 - 1 1/2 teaspoons yellow onion, grated
05 - 1 1/2 teaspoons granulated sugar
06 - 1 1/2 teaspoons Dijon mustard
07 - 1/4 teaspoon mustard powder
08 - 2 teaspoons fresh parsley, chopped
09 - 1 hard-boiled egg, grated

→ Salad

10 - 1 pound cooked ham, cut into strips
11 - 1 pound turkey breast, cut into strips
12 - 1 pound Swiss cheese, cut into strips
13 - 1/2 cup sweet gherkin pickles, sliced
14 - 1 head iceberg lettuce, shredded
15 - 12 pimento-stuffed green olives
16 - Kosher salt, to taste
17 - Freshly ground black pepper, to taste

# Instructions:

01 - In a blender, combine lemon juice, vinegar, salt, Dijon mustard, mustard powder, grated onion, and granulated sugar. Blend until the sugar dissolves. Transfer the mixture to a container and stir in parsley, grated egg, and mayonnaise. Chill until ready to use, up to 5 days.
02 - In a large bowl, toss the shredded lettuce, ham, turkey, Swiss cheese, pickles, and about 1 1/2 cups of the prepared dressing. Adjust seasoning with salt and pepper, toss again, and serve topped with green olives.
