Cool cucumbers, tomatoes, and onion soak in a zesty marinade for a crowd-pleasing, fresh summer salad.

# Ingredients:

→ Salad Base

01 - 2 large cucumbers, thinly sliced
02 - 3 medium tomatoes, cut into wedges or thick slices
03 - 1 medium red onion, thinly sliced

→ Marinade

04 - 60 ml white vinegar or apple cider vinegar
05 - 45 ml olive oil
06 - 12 g granulated sugar (optional)
07 - 5 g salt
08 - 2.5 g ground black pepper
09 - 2 g dried oregano or Italian seasoning

→ Garnish

10 - 15 g fresh parsley, chopped (optional)

# Instructions:

01 - Combine the sliced cucumbers, tomatoes, and red onion in a large mixing bowl.
02 - In a separate bowl, whisk together vinegar, olive oil, granulated sugar, salt, black pepper, and dried oregano until well combined.
03 - Pour the prepared marinade over the vegetables in the large bowl. Toss thoroughly to coat all pieces evenly.
04 - Cover the bowl and refrigerate for at least 60 minutes, allowing the flavors to infuse. For maximum flavor, marinate overnight.
05 - Give the salad a quick toss before serving. Garnish with chopped fresh parsley if desired.
