Low Carb Bacon Cheeseburger (Print Version)

Savor a low carb bacon cheeseburger with savory beef patties, crisp bacon, cheese, and chaffle buns.

# Ingredients:

→ Chaffle Buns

01 - 3 large eggs
02 - 120 grams shredded cheddar cheese
03 - 25 grams almond flour
04 - 0.5 teaspoon baking powder

→ Beef Patties

05 - 450 grams 80/20 ground beef
06 - 1 tablespoon worcestershire sauce
07 - 2 teaspoons minced garlic
08 - 0.5 teaspoon kosher salt
09 - 0.5 teaspoon ground black pepper

→ Burger Toppings

10 - 3 slices cheese of choice
11 - 6 slices thick cut bacon
12 - 6 romaine or iceberg lettuce leaves
13 - 3 slices tomato
14 - 2 tablespoons red onion, thinly sliced

# Instructions:

01 - In a mixing bowl, whisk eggs, cheddar cheese, almond flour, and baking powder until a thick batter forms.
02 - Preheat a mini waffle maker as per manufacturer’s instruction. Spoon approximately 60 ml batter per waffle and close the lid, ensuring not to overfill. Cook for about 3 minutes, or until steam ceases. Repeat until 6 waffles are made.
03 - In a large bowl, thoroughly combine ground beef with worcestershire sauce, minced garlic, kosher salt, and black pepper.
04 - Divide beef mixture evenly into 3 portions. Shape each into a patty approximately 1.25 cm thick using a burger press or between parchment sheets.
05 - Lightly season the formed patties with additional salt and black pepper or seasoned salt, according to preference.
06 - Preheat a grill to 204°C. Place burger patties on clean, heated grates and sear for 4 minutes. Flip and continue grilling for an additional 3–4 minutes until desired doneness. Add cheese slices in final minute, then remove from heat.
07 - For stovetop cooking, heat a large cast iron skillet over medium-high heat. Add 15 grams salted butter to coat. Fry patties for 3–4 minutes per side for a browned crust. Add cheese in final minute and cover for even melting.
08 - Preheat the air fryer to 199°C. Place patties inside and cook for 5 minutes; flip and continue air frying for 5–6 more minutes. When almost done, add cheese and close basket for final melt.
09 - Fry six bacon slices in a pan over medium heat or bake at 200°C until crisp, then drain on kitchen paper.
10 - Layer a chaffle bun base with lettuce, tomato, red onion, hot burger patty with melted cheese, crisp bacon, and top with another chaffle bun. Serve immediately.

# Notes:

01 - Chaffle buns can be prepared in advance and stored in an airtight container for up to 2 days.
02 - Monitor burger doneness by internal temperature: 63°C for medium or adjust according to preference.
