Voodoo Fries (Print Version)

# Ingredients:

01 - Russet potatoes, medium (6).
02 - Extra virgin olive oil (2 tablespoons).
03 - Cajun seasoning (1-2 tablespoons).
04 - Creamy ranch dressing (1/4 cup plus extra for dipping).
05 - Butter (2 tablespoons).
06 - Flour (2 tablespoons).
07 - Milk (2/3 cup).
08 - Shredded cheddar cheese (2 cups).

# Instructions:

01 - Wash, dry, peel potatoes and cut into thick fries (3/4 inch by 3 inches).
02 - Steam potatoes over simmering water 10-12 minutes until knife tender but not mushy. Toss with oil.
03 - Arrange on baking sheet in single layer. Bake at 450°F for 20-25 minutes, rotating pan halfway through.
04 - Melt butter, whisk in flour and milk until smooth. Add cheese and stir until melted and creamy.
05 - Season fries with cajun seasoning, drizzle with ranch and cheese sauce. Serve extra sauces for dipping.

# Notes:

01 - Steam potatoes just until tender, not mushy.
02 - Start with less cajun seasoning and adjust to taste.
03 - Serve extra sauces on side to prevent sogginess.
