Steak Dinner (Print Version)

# Ingredients:

01 - 2 ribeye steaks, about 1-inch thick.
02 - Salt and freshly ground black pepper.
03 - 2 tbsp olive oil.
04 - 1/2 cup unsalted butter, softened.
05 - Zest of 1 lemon.
06 - 2 tbsp freshly chopped parsley.
07 - 1 tbsp freshly chopped thyme.
08 - 1 clove garlic, minced.
09 - 4 large potatoes, peeled and cubed.
10 - 1/2 cup milk.
11 - 1/4 cup unsalted butter.
12 - Salt and pepper, to taste.

# Instructions:

01 - In a bowl, combine softened butter, lemon zest, parsley, thyme, minced garlic, and a pinch of salt. Mix until well combined. Set aside.
02 - Season steaks generously with salt and pepper.
03 - Heat olive oil in a skillet over medium-high heat. Add the steaks and cook for about 4-5 minutes per side for medium-rare, or until desired doneness.
04 - Remove from heat and top each steak with a dollop of the lemon herb butter. Let it melt over the warm steak.
05 - Boil potatoes in salted water until tender, about 15-20 minutes.
06 - Drain well and return to the pot.
07 - Add milk and butter to the potatoes, then mash until smooth and fluffy. Season with salt and pepper to taste.
08 - Plate the steaks alongside a generous serving of fluffy mashed potatoes. Spoon over any melted herb butter from the pan.
