In a food processor, pulse quartered onion and fresh parsley until finely chopped.

In a large mixing bowl, combine ground beef, chopped parsley-onion mixture, and all spices. Mix thoroughly with your hands.

Mold meat mixture around skewers, forming 1 to 1.5 inch thick kebabs.

Preheat gas grill to medium-high and brush with oil. Grill kebabs for about 4 minutes per side, or until cooked through.
