# Ingredients:

01 - 6-8 Butter Croissants

02 - 3/4 cup butter (1½ sticks), softened
03 - 3/4 cup brown sugar
04 - 1/4 cup granulated sugar

06 - 2 tsp. vanilla extract
07 - 2 tsp. cornstarch
08 - 1 tsp. baking soda
09 - 1/2 tsp. salt
10 - 2 cups all-purpose flour
11 - 1 cup chocolate chunks, preferably chopped from a high-quality chocolate bar

# Instructions:

01 - In the bowl of a stand mixer fitted with a paddle attachment, cream together the softened butter, brown sugar, and granulated sugar on medium speed until the mixture becomes light and fluffy, about 3 minutes.
02 - Add the egg and vanilla extract to the butter-sugar mixture and mix on low speed until just incorporated. Then increase the speed to medium-high and beat for 1 minute to properly emulsify.
03 - Scrape down the sides of the bowl if needed. Add the cornstarch, baking soda, and salt, mixing for about 30 seconds. Then add the flour 1 cup at a time, mixing until just fully incorporated after each addition.
04 - Add the chocolate chunks to the cookie dough and either beat for a few seconds on low speed or gently fold in by hand with a spatula until evenly distributed.
05 - Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
06 - Using a sharp serrated knife, carefully cut through each croissant horizontally, leaving the back uncut so it opens like a book. Place the cut croissants on the prepared baking sheet.
07 - For each croissant, use about 1/2 cup of cookie dough. Take some of the dough and press a thin layer evenly across the inside of the cut croissant, then gently press it closed.
08 - Take the remaining portion of the 1/2 cup of dough and add it to the top of each end of the croissant. It helps to flatten the dough between your hands first, then press it onto the croissant. Repeat until all croissants are filled and topped.
09 - Place the prepared crookies on the baking sheet and bake for 10-12 minutes, or until the cookie dough is slightly golden but not overly browned.
10 - Remove from the oven and allow the crookies to cool slightly on the baking sheet before serving warm.
