Set your oven to 350°F (or 175°C) and let it heat up.

Cook the beef and onion together in a big skillet until the meat is cooked through. Drain off any grease left behind.

Add the taco seasoning and beans to the skillet, stirring until it’s evenly mixed and warmed up.

Combine the mushroom soup and sour cream in a bowl. Stir it together until smooth.

Take half the soup mix and spread it across the bottom of your chosen baking dish.

Place tortillas over the soup layer, tearing them into pieces to cover completely.

Spoon half of the beef and bean mixture on top, then sprinkle about a cup of cheese over everything.

Repeat the process, ending by sprinkling the last of the cheese on top.

Pop it into the oven for 20 minutes, or just until the cheese is melted and bubbling at the edges.
