Simple Baked Burrito Casserole with Cheese and Beef (Print version)

A cheesy baked burrito casserole layered with seasoned ground beef, refried beans, tortillas, sour cream sauce, and a bubbly golden top.

# Ingredients:

For the beef filling

01 - 1 lb (450 g) lean ground beef
02 - 1 small yellow onion, diced
03 - 1 packet (1 oz or 28 g) taco seasoning
04 - 1 can (16 oz or 454 g) refried beans

For the layers

05 - 1 can (10.5 oz or 298 g) condensed cream of mushroom soup, undiluted
06 - 1/2 cup (120 g) sour cream
07 - 6 large flour tortillas, torn or cut to fit
08 - 2 1/2 cups (280 g) shredded Mexican cheese blend
09 - Cooking spray or 1 teaspoon oil for the baking dish

Optional toppings

10 - Chopped cilantro, diced tomatoes, shredded lettuce, avocado, salsa, or jalapenos

# Instructions:

01 - Preheat the oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
02 - Add the ground beef and diced onion to a large skillet over medium-high heat. Cook for 7-9 minutes, breaking up the meat, until the beef is browned and no pink remains. Drain excess fat.
03 - Stir in the taco seasoning and refried beans. Cook for 2-3 minutes, stirring often, until the mixture is hot and thick.
04 - In a medium bowl, stir the condensed cream of mushroom soup and sour cream until smooth.
05 - Spread half of the sour cream sauce in the bottom of the dish. Add a layer of tortillas, half of the beef mixture, and 1 cup of cheese. Repeat with more tortillas, the remaining beef, the remaining sauce, and the rest of the cheese.
06 - Bake uncovered for 20-25 minutes, until the cheese is melted and the edges bubble. Rest for 5-10 minutes before slicing and serving with toppings.
