Vibrant Kiwi Blueberry Mojito with Fresh Mint and Lime (Print version)

A bright kiwi blueberry mojito loaded with fresh mint, lime, and juicy berries. Ready in 10 minutes for easy summer sipping.

# Ingredients:

Fruit & herbs

01 - 3 ripe kiwis, peeled and diced
02 - 1/2 cup fresh blueberries, plus extra for garnish
03 - 1/3 cup fresh mint leaves, plus sprigs for garnish

Cocktail base

04 - 1/3 cup fresh lime juice (about 3 limes)
05 - 3 tablespoons granulated sugar
06 - 1/2 cup white rum
07 - 1 cup sparkling water, chilled

To serve

08 - 4 cups ice cubes
09 - 1 tablespoon colored sugar for rimming (optional)

# Instructions:

01 - Peel and dice the kiwis. Pulse in a food processor with the sugar and lime juice until mostly smooth with small bits remaining.
02 - Place blueberries and torn mint in a sturdy glass or pitcher. Press gently with a muddler just until the berries burst and the mint is fragrant.
03 - Add the kiwi puree, rum, and a handful of ice to a shaker. Shake vigorously for 10 seconds until the shaker is frosty.
04 - Strain into ice-filled glasses. Top with sparkling water and stir gently. Garnish with whole blueberries, kiwi slices, and mint sprigs.

# Good to know:

01 - Best served immediately while sparkling water is still fizzy.
02 - For a mocktail, omit rum and add extra sparkling water.
